Sub inspired Vegetable Sandwich

Vishnu n I love subs very much..First thing is, its a very healthy diet when it comes to fast food. Normally, what i do to make sandwich is jus put the cheese n veggies on bread n  throw it in microwave for 50 secs.. Though it is very tasty but bread used to be little saggy. Later i tried making sandwich in sub style..It so easy n very tasty...All you have to do is jus toast the bread in toaster, microwave cheese n veggies n jus make a sandwich...I love honey wheat bread. You can substitute your fav bread.


Lets come to the preparation part of the healthy sub inspired vegetable sandwich:

Ingredients:
Honey Wheat Bread: 2 slices
Mayonnaise: 1 tsp
Red Vinegar:1/2 tsp or kind of dressing u prefer.
Tomato slices: 2
Green Pepper strips: 5-6 small
Onion rings: 3
Spinach leaves: 6-8
Cheddar Cheese: 1 slice or as your choice
Lettuce: 1 fist
Basil or Oregano: jus to sprinkle

**** You can  choose your own choice of vegetables

Preparation:
1) Toast the bread slices in toaster until the sides get crispy or for about 30 -45secs. Keep them aside.
2) Take small piece of foil or deli wrap paper.
3) On foil arrange onion rings first and then green peppers strips followed by tomato slices.
4) Collect spinach leaves in an order n place them on top of tomato slices.
5) Put cheese slice on top of spinach.

6) Carefully place he foil in microwave. Microwave it for 25 secs or until cheese started to melt.
7) Spread mayo onto bread slices with knife. Then spread your choice of dressing on mayo.

8) Carefully, flip the melted cheese n vegetable on top of bread. Cheese has to go down n onions has to come upside
9) Garnish with extra spinach n lettuce.

10) Sprinkle basil n cover with another bread slice.

Bread Pudding -- Portuguese

As Friday comes, i search my pantry to see what  i am having. Every Friday, i make something different from what i do on weekdays as  specials for evening snacks or for dinner. Vishnu asked me to prepare some dessert and  also i am planning to send an entry to Priya's AWED-Portuguese. So, i was searching internet for deserts n i came up with  this Portuguese bread pudding. When i went thru ingredients, to my surprise most of them are same as  the ingredients of  fresh toast, which is my all time favorite. So, i imm made this pudding without any second thought, as i am pretty sure that Vishnu is going to love it( French toast is also he is fav).
This bread pudding is so simple to make n tastes very great. All you need to do is jus mix the milk, sugar  n eggs, add it to bread n jus throw it in oven for an hour. I altered little bit to suit Indian taste. You can check original one here


Ingredients:
Bread: 7 slices
Evaporated milk: 2 cups
Sugar: 1 cup
Butter: 2 tbsp
Eggs: 3
Raisins: 2 tbsp
Cashews: 1tbsp
Jaggery/ Brown sugar: 2tsp
Cinnamon powder: 1/2 tsp
Salt: 1/2 tsp
Vanilla Essence: 2-3 drops
Nut meg: pinch

Preparation:
1) Remove the edges from bread. Cut bread into 4  pieces.
2) In a microwave bowl add evaporated milk. Actually, I was short of 1/3 cup of evaporated milk. So i added 2% reduced milk to make it  2 cups. You can use 2 cups of regular milk. But evaporated milk gives rich creamy taste to pudding.
3) Heat milk for 1 min in microwave.
4) Add butter n stir. Keep it aside, so that butter melts in warm milk.
5) Mean while in a bowl break eggs. Beat the eggs slightly. Jus to break yolks/yellows.

6) Stir in sugar, cinnamon, nutmeg,salt, vanilla essence. Mix it well with egg mixture.
7) Add milk n butter mixture to egg mixture. Mix well.
8) Taste it ( if u can) if u want more sugar u can add.
9) Grease a medium sized baking pan or glass bowl i.e oven safe.
10) Place sliced bread pieces evenly. 
11)  Sprinkle raisins, cashews, jaggery/ brown sugar. I was short of brown sugar so i added jaggery. 
Pour the half of the egg-milk mixture on the bread pieces.
12) Layer remaining bread pieces on top of the egg- milk mixture.
13) Now pour the remaining egg-milk mixture on top of layered bread slices.
14) Soak it for 15 mins.
15) Preheat oven 5-10 mins before. 
16) Bake the bread pudding mixture for 45-50 mins at 340 F degrees heat. When u check it has to change the  color to light golden color.

Baked Pita Chips

Pita chips are known for their consistency. This chips are made by using pita bread which is available in many flavors. Baked pita chips are healthier than most of the chips n easy to make. Pita chips goes well with dips or with butter,cheese or jus as simple pita chips.



Ingredients:
Whole wheat bread pockets: 12
Olive oil: 1/2cup
Ground black pepper: 1tsp
Garlic salt:1/2 tsp
Dried Basil: 1tsp

Preparation:
1) Preheat oven to 400 degrees F.
2) Cut each pita in half, then in quarters and then again into squares or until the size n shape u like.. I prefer small ones so that they can bake faster.
3) Spread the chips evenly on greased cookie sheet. Prick with fork to make tiny holes,randomly.
4) In a small bowl, combine all the ingredients except pita pockets n mix well.
5) Brush each pita square with oil mixture.
6) Bake in the preheated oven for 8 mins or until lightly browned n crispy.
Keep an eye on them, as they tend to burn easily.

Allow them to cool n serve..


 Enjoy thi scrispy healthy chips with tea or with dips...

Bread Fritters

This is my favorite snack when it comes to tea time..I like it for 3 reasons.. It tastes very good-- Easy to make -- and the important thing is---  a healthy snack. The best part of this Bread Fritters is-- it doesn't absorb any oil.



All you need to have, to prepare this delicious healthy snack is bread , spinach and cilantro with a touch of chili powder n salt and the main base ingredients -- Gram flour n Rice flour.
Here is the recipe for Bread Fritters.
Ingredients: 
Bread: 3 Slices
Cilantro: 1cup, Finely chopped
Oil for deep frying
Spinach: 1/2 cup finely chopped(optional)
For batter:
Gram flour: 11/2 cup
Rice flour: 2tbsp
Chili powder: 1tsp
Salt: to taste
Coriander seeds: 2tsp, Make into a coarse powder, don't use pre made powder. it doesn't taste good.
Ground Pepper: 1tsp
Water1-2 cups



Preparation:
1) In a heavy bottom pan, heat oil at 350 degrees.
2) Remove the edges from bread n cut into half.
3) In a bowl mix all the ingredients for batter. Mix well without any lumps by adding water little by little. Don't make  it too watery or to thick. Batter should be like,when u immerse bread slice, it has to stick to bread.






4) Stir in cilantro and spinach
5 Take a halved bread slice and coat with batter on both sides.
6) Check whether oil is hot or not by dropping a drop of batter. If it comes up imm then oil is hot enough for frying.
7) Carefully drop a battered bread slice in hot oil. Fry for 2 mins or until it turns into golden color on both sides.


8) Take it out with a slotted spoon. Place it on a paper towels to drain the excess oil, if  any.
9) Repeat the same process for remaining slices.
10) Serve with ketchup or green chutney.
