Bread Pudding -- Portuguese

As Friday comes, i search my pantry to see what  i am having. Every Friday, i make something different from what i do on weekdays as  specials for evening snacks or for dinner. Vishnu asked me to prepare some dessert and  also i am planning to send an entry to Priya's AWED-Portuguese. So, i was searching internet for deserts n i came up with  this Portuguese bread pudding. When i went thru ingredients, to my surprise most of them are same as  the ingredients of  fresh toast, which is my all time favorite. So, i imm made this pudding without any second thought, as i am pretty sure that Vishnu is going to love it( French toast is also he is fav).
This bread pudding is so simple to make n tastes very great. All you need to do is jus mix the milk, sugar  n eggs, add it to bread n jus throw it in oven for an hour. I altered little bit to suit Indian taste. You can check original one here


Ingredients:
Bread: 7 slices
Evaporated milk: 2 cups
Sugar: 1 cup
Butter: 2 tbsp
Eggs: 3
Raisins: 2 tbsp
Cashews: 1tbsp
Jaggery/ Brown sugar: 2tsp
Cinnamon powder: 1/2 tsp
Salt: 1/2 tsp
Vanilla Essence: 2-3 drops
Nut meg: pinch

Preparation:
1) Remove the edges from bread. Cut bread into 4  pieces.
2) In a microwave bowl add evaporated milk. Actually, I was short of 1/3 cup of evaporated milk. So i added 2% reduced milk to make it  2 cups. You can use 2 cups of regular milk. But evaporated milk gives rich creamy taste to pudding.
3) Heat milk for 1 min in microwave.
4) Add butter n stir. Keep it aside, so that butter melts in warm milk.
5) Mean while in a bowl break eggs. Beat the eggs slightly. Jus to break yolks/yellows.

6) Stir in sugar, cinnamon, nutmeg,salt, vanilla essence. Mix it well with egg mixture.
7) Add milk n butter mixture to egg mixture. Mix well.
8) Taste it ( if u can) if u want more sugar u can add.
9) Grease a medium sized baking pan or glass bowl i.e oven safe.
10) Place sliced bread pieces evenly. 
11)  Sprinkle raisins, cashews, jaggery/ brown sugar. I was short of brown sugar so i added jaggery. 
Pour the half of the egg-milk mixture on the bread pieces.
12) Layer remaining bread pieces on top of the egg- milk mixture.
13) Now pour the remaining egg-milk mixture on top of layered bread slices.
14) Soak it for 15 mins.
15) Preheat oven 5-10 mins before. 
16) Bake the bread pudding mixture for 45-50 mins at 340 F degrees heat. When u check it has to change the  color to light golden color.

Nice recipe.. I reduced the amount of butter to 1 Tbsp and used egg whites. Also, I used cinnamon raisin bread for the pudding. Turned out excellent! Thanks :-)

Looks very tempting!! I made my French toast with oranges and it tastes great without the calories!!
